Ethiopia 'Opal' Carbonic Maceration Filter.

If you're reading this you have just purchased the Opal filter. Congratulations! 

We should warn you, this baby descends straight from Funky Town. 

This coffee is from the famous Guji-Uraga region of Ethiopia. 

As reflected in this artwork, the Opal profile changes flavours as the drink cools down. 

We copped big time tropical flavours at the beginning, think passionfruit, pineapple, green apple. As it cooled these flavours transitioned into some red/dark fruits, think strawberry, blueberry with a boozy finish. 

Because this is a heavily fermented coffee it is highly soluble. As such we suggest you brew at a lower temperature. We used a Kono brewer and used the following recipe: 

Water Temp: 91 

Coffee: 15g 

Water: 240g 

Time: 2:15 

Pours: 40g, 40g, 80g, 80g, in 30 second increments.
