We are pleased to bring (what we believe to be) an Australian exclusive, La Palma El Tucan's new process; Bio-Innovation.
Most of you would be familiar with this farm, the reigning World Barista Champion Jeon Jooyeon used coffee from here to win the title.
La Palma El Tucan's coffee is very unique in flavour. Few, if any can replicate their flavour profiles that are always complex and possess the most structured acidity in all of coffee.
Bio-Innovation only amplifies these qualities. The process begins by capturing and reproducing microorganisms within the farm itself and making a substrate in which perfectly ripened cherries will bathe for at least 100 hours in clay pots.
From there the coffee cherries will go through either a Natural, Pulped Natural or Washed process. In our case, we have a Bio-Innovation Washed, and it is every bit as tasty as it sounds.
At the front the coffee is clean with some juicy stone fruit flavours. Think white peach, lychee and turkish delight transitioning into those classic La Palma flavours, think grapefruit like acidity, kiwi and juicy.
First and likely only roast of this coffee will be on Tuesday March 30. Dispatched using Sendle. Regional orders may be sent using a different courier, if this happens you will be provided a tracking number and notified via email.
